WHere is an easy version of a cocktail from the seasonal cocktail list. Designed as a large-volume prepared mix that's bursting full of essence of a Christmas time, making it ideal for hosting a festive gathering. Any leftover syrup you can use for breakfast cocktails, desserts, or to make more rounds of bikinis.
The Bikini Cocktail
Serves 10 servings
To make the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put every items into a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, remove from the burner allowing it to cool entirely. Transfer to a sterilised bottle, cap it and store in the fridge, where it will keep for up to a month.
Preparing the Batch Mix: Pour the specified liquid ingredients in a large bottle, let it rest for one hour, then pass it through , ideally through a fine cloth, so it's perfectly clear.
When ready to serve: Add 85ml from the batch mix into your stirring glass filled with ice, gently stirring lightly for a minute to chill. Filter to a cold coupe glass or a similar vessel, top with some cranberries and complete it with a brief mist of the essential oil over the top.
